  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon Amchur (dry mango) powder
  • Salt to taste
  • Fresh coriander leaves for garnish

2. For Bhature:

  • 2 cups all-purpose flour
  • 1/2 cup semolina (sooji)
  • 1/2 teaspoon baking soda
  • 1/2 cup yogurt
  • 1 teaspoon sugar
  • Salt to taste
  • Water as needed
  • Oil for deep frying


1. Prepare the Choles:

  • Rinse the soaked chickpeas and cook them in a pressure cooker with a sufficient amount of water and a pinch of salt until they are tender (about 6 to 7 whistles).
  • Heat oil in a large pan over medium heat.
  • Add the cumin seeds, the bay leaf, the black cardamom, the green cardamom, the cloves and the cinnamon stick.
  • Sauté until fragrant.
  • Add the onions and cook until they are golden brown.
  • Add ginger, garlic and green chilies and saute for another 2-3 minutes.
  • Add tomato puree and cook until the oil separates from the masala.
  • Add coriander powder, cumin powder, garam masala, turmeric powder, red chili powder and salt. Cook for a few minutes.
  • Add the cooked chickpeas along with their water. Stir well and simmer for 15-20 minutes until the gravy thickens.
  • Stir in the Amchur powder and garnish with fresh coriander leaves.

2. Make the Bhature:

  • In a large mixing bowl, combine all-purpose flour, semolina, baking soda, sugar, and salt.
  • Add yogurt and mix well. Gradually add water until you have a soft dough.
  • Cover the dough with a damp cloth and let it rest for 1-2 hours.
  • Divide the dough into small balls and roll them into circles.
  • Heat the oil in a deep frying pan.
  • Fry the rolled-out circles one at a time until they puff up and turn golden brown.
  • Drain on paper towels to remove excess oil.
