Ingredient

1. For Chole:

  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon Amchur (dry mango) powder
  • Salt to taste
  • Fresh coriander leaves for garnish

2. For Bhature:

  • 2 cups all-purpose flour
  • 1/2 cup semolina (sooji)
  • 1/2 teaspoon baking soda
  • 1/2 cup yogurt
  • 1 teaspoon sugar
  • Salt to taste
  • Water as needed
  • Oil for deep frying

Instruction

1. Prepare the Choles:

  1. Rinse the soaked chickpeas and cook them in a pressure cooker with a sufficient amount of water and a pinch of salt until they are tender (about 6 to 7 whistles).
  2. Heat oil in a large pan over medium heat.
  3. Add the cumin seeds, the bay leaf, the black cardamom, the green cardamom, the cloves and the cinnamon stick.
  4. Sauté until fragrant.
  5. Add the onions and cook until they are golden brown.
  6. Add ginger, garlic and green chilies and saute for another 2-3 minutes.
  7. Add tomato puree and cook until the oil separates from the masala.
  8. Add coriander powder, cumin powder, garam masala, turmeric powder, red chili powder and salt. Cook for a few minutes.
  9. Add the cooked chickpeas along with their water. Stir well and simmer for 15-20 minutes until the gravy thickens.
  10. Stir in the Amchur powder and garnish with fresh coriander leaves.

2. Make the Bhature:

  1. In a large mixing bowl, combine all-purpose flour, semolina, baking soda, sugar, and salt.
  2. Add yogurt and mix well. Gradually add water until you have a soft dough.
  3. Cover the dough with a damp cloth and let it rest for 1-2 hours.
  4. Divide the dough into small balls and roll them into circles.
  5. Heat the oil in a deep frying pan.
  6. Fry the rolled-out circles one at a time until they puff up and turn golden brown.
  7. Drain on paper towels to remove excess oil.

3. To serve:

  1. Serve the hot Bhature with the spicy Chole.
