Ingredient
1. For Chole:
- 2 cups chickpeas (soaked overnight)
- 2 large onions, finely chopped
- 3 tomatoes, pureed
- 2 green chilies, slit
- 1-inch ginger, grated

- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon Amchur (dry mango) powder
- Salt to taste

2. For Bhature:
- 2 cups all-purpose flour
- 1/2 cup semolina (sooji)
- 1/2 teaspoon baking soda
- 1/2 cup yogurt
- 1 teaspoon sugar
- Salt to taste
- Water as needed
- Oil for deep frying
Instruction
1. Prepare the Choles:
- Rinse the soaked chickpeas and cook them in a pressure cooker with a sufficient amount of water and a pinch of salt until they are tender (about 6 to 7 whistles).
- Heat oil in a large pan over medium heat.
- Add the cumin seeds, the bay leaf, the black cardamom, the green cardamom, the cloves and the cinnamon stick.
- Sauté until fragrant.
- Add the onions and cook until they are golden brown.
- Add ginger, garlic and green chilies and saute for another 2-3 minutes.
- Add tomato puree and cook until the oil separates from the masala.
- Add coriander powder, cumin powder, garam masala, turmeric powder, red chili powder and salt. Cook for a few minutes.
- Add the cooked chickpeas along with their water. Stir well and simmer for 15-20 minutes until the gravy thickens.
- Stir in the Amchur powder and garnish with fresh coriander leaves.
2. Make the Bhature:
- In a large mixing bowl, combine all-purpose flour, semolina, baking soda, sugar, and salt.
- Add yogurt and mix well. Gradually add water until you have a soft dough.
- Cover the dough with a damp cloth and let it rest for 1-2 hours.
- Divide the dough into small balls and roll them into circles.
- Heat the oil in a deep frying pan.
- Fry the rolled-out circles one at a time until they puff up and turn golden brown.
- Drain on paper towels to remove excess oil.
3. To serve:
- Serve the hot Bhature with the spicy Chole.
